Sometimes in the kitchen, you just need to throw out any sort of plan and freestyle a bit. I never really make soup, but feeling soupy, a hit combination was found. This potato and rocket soup is a winner and it’s as easy as falling off a log. The potato subdues the strength of the rocket, making it something of mystery and intrigue. The colour is pretty too.
Ingredients
- 2 boiled potatoes
- cup chicken stock
- 2 handfuls baby spinach and rocket
- 2 slices of tasty cheese
Method
- Blend until smooth, and heat gently if required.
