Stained Glass Window Biscuits

I have been wanting to make these biscuits for years now, and yesterday I finally made them. They worked a treat! Easier than I thought, they are definitely something to impress with this Christmas.

Ingredients

  • 250g unsalted butter, softened
  • 2 1/4 cups plain flour
  • 3/4 cup caster sugar
  • 1 vanilla bean
  • 1 egg
  • 1 tablespoon of water
  • boiled lollies

Method

  1. Preheat oven to 180˚C or 160˚C for fan-forced. Line two trays with baking paper.
  2. Place butter, egg and sugar into a medium sized mixing bowl. Score the vanilla bean down the middle and scrape seeds into the ingredients. Beat with an electric mixer until light and fluffy. Stir in sifted flour and knead on a floured surface until the dough is smooth. Place in fridge for 30 minutes.
  3. Whilst dough is chilling, smash the boiled lollies (separated by coulour) into shards with a rolling pin. I recommend doing this is a plastic bag.
  4. Roll dough until 4mm thick. Cut dough into shapes and then cut out a window for the lollies.
  5. Bake cookies for 7 minutes then remove from oven and place the lollies into the windows. Bake for a further 5 minutes then cool. Careful not to burn yourself on the suagr, and don’t touch them until they are cool, otherwise the lolly centre won’t be set.
