Tonight, I made Chicken Tikka Masala, and I wanted a refreshing dessert to accompany it. Cue mango pudding. Mango season is upon us and I have already partaken in their sweet, juicy flesh and life is good. This recipe is so simple and makes for a dessert everyone will love.
Ingredients
- 1 1/4 cup milk
- 3/4 cup heavy cream
- 1 mango peeled, cut and pureed (1 cup)
- 4 tablespoons sugar
- 1 sachet gelatine
Directions
- Empty the gelatine sachet into a bowl and mix with a little boiling water to form clear, smooth jelly. Set aside momentarily.
- In a medium sized bowl, place the milk, cream, sugar and mango and beat with an electric mixer until smooth.
- In a saucepan, bring this entire mixture to a boil on a medium-low flame, stirring all the while, about 8 minutes or so. Take off the heat and stir in the gelatine solution.
- Pour into individual glasses or bowls, or one larger one and cool in the refrigerator for a few hours before serving.
