Mango Pudding

Tonight, I made Chicken Tikka Masala, and I wanted a refreshing dessert to accompany it. Cue mango pudding. Mango season is upon us and I have already partaken in their sweet, juicy flesh and life is good. This recipe is so simple and makes for a dessert everyone will love.

Ingredients

  • 1 1/4 cup milk
  • 3/4 cup heavy cream
  • 1 mango peeled, cut and pureed (1 cup)
  • 4 tablespoons sugar
  • 1 sachet gelatine

Directions

  1. Empty the gelatine sachet into a bowl and mix with a little boiling water to form clear, smooth jelly. Set aside momentarily.
  2. In a medium sized bowl, place the milk, cream, sugar and mango and beat with an electric mixer until smooth.
  3. In a saucepan, bring this entire mixture to a boil on a medium-low flame, stirring all the while, about 8 minutes or so. Take off the heat and stir in the gelatine solution.
  4. Pour into individual glasses or bowls, or one larger one and cool in the refrigerator for a few hours before serving.
