An old favourite that often gets forgotten about until you have a slice, and the memory of how awesome it is floods your system like a hit of narcotics; banana bread. Ridiculously easy to make. Why not make a loaf and take it over to someone’s place for a spontaneous afternoon tea?
Ingredients
- 1 3/4 cups self raising flour
- 1/4 cup plain flour
- 2/3 cup (firmly packed) brown sugar
- 2 over-ripe bananas, mashed
- 1 teaspoon ground nutmeg
- 1/2 cup milk
- 1/4 cup melted butter (plus extra for greasing tin)
- 2 eggs, lightly whisked
Directions
- Preheat oven to 180˚C. Grease a loaf tin (11cm x 21cm) with melted butter, you can line it with baking paper if you like (I did not).
- Combine the flours, nutmeg, and sugar in a large bowl, and make a well in the centre. Next add the milk, butter and eggs and mix until well combined.
- Add the mashed bananas into the mixture and stir through until evenly distributed.
- Pour the mixture into the tin and place in the oven and bake for approximately 45 minutes, or until a skewer comes out clean. Remove from oven and turn onto wire rack to cool. Enjoy.
