Banana Bread

An old favourite that often gets forgotten about until you have a slice, and the memory of how awesome it is floods your system like a hit of narcotics; banana bread. Ridiculously easy to make. Why not make a loaf and take it over to someone’s place for a spontaneous afternoon tea?

Ingredients

  • 1 3/4 cups self raising flour
  • 1/4 cup plain flour
  • 2/3 cup (firmly packed) brown sugar
  • 2 over-ripe bananas, mashed
  • 1 teaspoon ground nutmeg
  • 1/2 cup milk
  • 1/4 cup melted butter (plus extra for greasing tin)
  • 2 eggs, lightly whisked

Directions

  1. Preheat oven to 180˚C. Grease a loaf tin (11cm x 21cm) with melted butter, you can line it with baking paper if you like (I did not).
  2. Combine the flours, nutmeg, and sugar in a large bowl, and make a well in the centre. Next add the milk, butter and eggs and mix until well combined.
  3. Add the mashed bananas into the mixture and stir through until evenly distributed.
  4. Pour the mixture into the tin and place in the oven and bake for approximately 45 minutes, or until a skewer comes out clean. Remove from oven and turn onto wire rack to cool. Enjoy.
