Last Wednesday evening, I had the pleasure of assisting Gennaro Conti in his cooking masterclass at Recipease, Clapham Junction. A character that is full of life and passion, Gennaro enthralled his audience with his flamboyancy and eccentricity. To watch him make fresh pasta was something of a marvel – he doesn’t believe in resting the dough – and formed from what looked rather scrappy and useless, the most amazing, silky pasta.
His ethos of flavour and love is simple and should be adhered to by all.
