Experimenting in the kitchen is always fun and when one of your friends sees a picture of someone else’s chocolate pancakes on Facebook, and instantly wants some, you just offer to make them, especially when they also have some Oreos on hand.
This basic pancake recipe is a no-sugar recipe as the sweetness can come from the sauce or other topping you might use. In this case, I added choc-chips and crushed Oreos to the batter as well as cocoa. These pancakes are fluffy and thick, worth the effort of beating the egg whites, I promise.
Ingredients
- 1 cup plain flour
- 4 eggs, separated
- 140ml milk
- 2 tablespoons of cocoa
- big handful of milk choc-chips
- big handful of crushed Oreos
Method
- Pour flour, cocoa, egg yolks and milk into a bowl and mix well with a wooden spoon.
- With an electric mixer, beat egg whites until stiff peaks form. Fold through the mixture.
- Sprinkle through the choc-chips and crushed Oreos, careful not to mix the air out of the batter.
- Place a dollop into a hot pan and flip when golden.
Toffee Sauce
Ingredients
- 1 cup cream
- 1 cup brown sugar
- knob of butter
Directions
- Place cream and sugar into a saucepan and bring to the boil. Stir in the knob of butter and make sure the sauce is smooth.2) Pour sauce over stack of pancakes and garnish with Oreo crumbs and choc-chips.
