Sometimes I get a craving for mince. Sounds rather uninspiring, however, mince has an undeniable yum factor that can be rediscovered with this easy, flavoursome approach.
This bowl dinner will set you back about ten minutes and only a few pounds, so it wins in terms of economy. Serves 2.
Ingredients
- 200g beef mince
- half cup water
- splash olive oil
- good quality sea salt (Maldon all the way)
- black pepper
- shake of smoky paprika
- shake of ground cumin
- 2 large, flat mushrooms, chopped
- 2 handfuls of baby spinach
- yellow capsicum
- handful cherry tomatoes
- 2 cloves garlic, finely chopped
Method
- Over medium heat, cook the beef mince with half a cup of water until it is brown but there is still some liquid in the pan. This liquid will act like a gravy for the dish.
- Add the seasoning, salt and pepper to taste, remembering that mince can take a lot of flavour. Next add the spices and stir through. Turn the heat down to low.
- In a separate pan, fry the mushrooms in some olive oil. Add to the mince and also add the spinach and let it cook until it wilts (about a minute).
- Add the capsicum, cherry tomatoes and garlic and stir through. You just want to warm these vegetables, not cook them as they add crunch and texture. Serve in a bowl and enjoy.
