You’d be forgiven if you thought this was pesto. I was cooking a steak and wanted something a little different to dress it with, so I created a rocket sauce that is so easy, and utterly delicious. Throwing in some mushrooms make it a substantial sauce and provide lovely bass notes to the peppery hits the rocket gives. Why not whip some up and slather all over some chicken, lamb or oven-roasted veggies? I bought some mushrooms and pan-friend them in olive oil. When cool, I blitzed them in the food processor with a splash of chicken stock, some crumbled feta, and a handful of baby spinach and rocket.
Ingredients
- handful mushrooms
- big handful of baby spinach and rocket leaves
- 50ml chicken stock
- 30g feta
- olive oil, for frying
Directions
- Pan-fry the mushrooms in olive oil.
- When cooled, blitz in a food processor along with the rest of the ingredients.
